3/4 cup blue cheese (about 4 ounces)
1/2 cup oil
1/4 cup grapefruit juice
1/2 tsp seasoned salt
1 cup sour cream
6 cups fresh spinach
6 oranges, peeled and sectioned
1/2 cup cashews or pecans
Combine blue cheese, oil, juice, and salt in blender until smooth. Stir in sour cream. Chill at least one hour.
Prepare spinach and oranges. Just before serving, combine dressing, spinach, oranges, and nuts.
